The Chili Shack was created because of a demand for a good bowl of chili and a good chili dog in the Kansas City area.
In my travels I find good chili dogs in airports and small quick serve restaurants in towns like Chicago and Cincinnati. Many serve other specialties like spaghetti topped with chili, Italian beef and sausage sandwiches, tamales topped with chili and cheese and many other delicious offerings.
We decided we couldn't take it any longer and decided to take the plunge and open the chili shack. We had to have that good stuff.
We opened in February across the street from city hall in downtown Kansas City.
We don't want a fancy joint just a place to get some good stick to your bones hot food and a cold beer.
The chili shack will evolve into something great. I’ve got that feeling.
